Makes about eight 6” pancakes.
Sift before measuring:
1 cup cake flour
Sift flour with:
1 teaspoon sugar
½ teaspoon salt
½ teaspoon baking soda
Beat lightly together:
1 large egg (room temperature)
1 cup buttermilk (room temperature)
2 Tablespoons melted butter
¾ teaspoon double-acting baking powder
Quickly combine the wet and dry ingredients. Add a little more buttermilk if mix seems too stiff.
Bake 2-3 at a time on a 380 degree F griddle. Serve immediately or transfer to warm 200 degree oven for staging when making large batches.
Serve with real butter and warm Maple syrup for best results.
